Trying find more healthy dessert alternatives i made this almond biscuit with lemon zest macerated blue berries and shaved tonka beans to give it a deeper flavor. Most of the flour was substituted with ground almonds.

The shallot broth is seasoned with coriander lemon and soy sauce giving it a savory aromatic flavor balanced with acidity. The panna cotta gives creamy savory texture so i could turn cream of mushroom soup inside out. If i do this again i would garnish it with pickled honji mushrooms or enokis.

I wanted a hearty brother fish dish but didn't want it to cloy to my teeth so it became a tart vinegar wine reduction with other aromatics like fennel and saffron. i mounted the saffron in last to preserve the aroma and color.
